New Potentiometric Titrator COM-1700 series

POV determination in food processing oil

POV (peroxide value) …is an important parameter used to determine the degradation level of oil and fat for quality control purposes. The POV is expressed as milligrams of iodine liberated from potassium iodide per kilogram of sample. The amount of iodide equal to peroxide contained in the sample is liberated based on the chemical formula (1)

Liberated iodide is titrated with 0.01mol/L sodium thi osulfate solution as formula (2).

Since oil and fat tend to be easily oxidized atmospherically, it is important to constantly monitor the procedure. An additional POV kit will enhance the process of titration with nitrogen purge and the following steps can be smoothly and efficiently completed for accurate results.
